Ingredients:
3 cups corn
1 cup all-purpose flour
1 tsp salt
1 tsp baking soda
1 tbsp baking powder
1/2 tsp sugar
1 1/2 cups milk
1/2 tbsp oil
Instructions:
In a blender, combine the corn, flour, salt, baking soda, baking powder, sugar, milk, and oil.
Pulse the ingredients until properly blended. The batter can be smooth or chunky depending on your preference.
Pour the batter into a bowl for easier handling.
Heat a skillet over medium heat for about 3 minutes.
Pour 1/3 cup of batter onto the skillet for each hotcake.
Cook until bubbles form on the outer part of the hotcake, then flip and cook the other side until golden brown.
